Protein “Truffles”

I feel like it’s been ions since I posted a recipe of some sort. Today marks week two of our no spend month.

And while there were a couple of hiccups along the way (unexpected costs arise, it happens), we’ve been doing pretty darn good.

I really liked the Enjoy Life protein bites I had during my Bear Mountain trip. I was going to buy them again but then I remembered; “no spend month.”20190705_1216349036474577401370582.jpgI also remembered, I used to make my own chocolate bites or protein “truffles” as I’d like to call them.

Your average dark chocolate truffle has a bit over half a gram of protein.

My protein “truffles” have almost FOUR grams of protein each (this may vary depending on the protein powder you use) for about the same calories.20190713_2315205137279441942519992.jpgFor me, two to three of these are super satisfying. I would stick to a million three as a serving size to get you that chocolate fix but also give you an energy boost too during your afternoon slump. 😉

With this recipe, be sure to use a “runny” nut butter.

If you’re nut butter is too thick in consistency, you will have to add a ton of  extra almond milk. The recipe still works well (as I’ve tried it), it will just take more time to find the right consistency.20190713_2317556332990221821260941.jpgChocolate Protein “Truffles”

  • ¼ Cup of Dark Chocolate Chips (Semi-Sweet work too)
  • ¼ Cup of Natural Peanut Butter (Almond Butter works too)
  • 1 Scoop Vanilla Protein Powder (¼ Cup)
  • 2 Tbsps Rolled Oats
  • 2 Tbsps of Chopped Almonds (or other nut)
  • 1 Tbsp Hemp Seeds (optional)
  • 3+ Tbsps Unsweetened Almond Milk*

Melt the chocolate chips in a small microwave safe bowl with one tablespoon of almond milk for about 30-45 seconds. Add in the peanut butter to the melted chocolate and stir well.

Add the rest of the ingredients slowly, except the almond milk.

The mixture may be crumbly, so add a little almond milk* at a time til you reach a “cookie dough like” consistency. Then, using a ½ tablespoon, measure out the mixture and form into your “truffles.”

***

You can top with hemp seeds, crushed almonds or leave as is.  Store in the fridge for up to a week, but trust me it won’t last that long. 😛20190713_2317151556673843901136447.jpg[It came out to about 14 truffles total on my end.]

Plus, it wasn’t going to fit on the cutting board anyways.
